Lately, whenever the Hispanic students in my class are participating in classroom discussions I have been hearing a certain group of kids talk about the wall that the president wants to build. I have told them several times to stop and am thinking about calling a meeting with their parents as that behavior is not tolerated.
Is this the best route or does anyone have a better solution?

I would maybe talk to them privately and have a discussion with them as to why its not okay rather than just telling them to stop

I would definitely talk to the students about why that is inappropriate and ask them how they would feel if someone was talking about them if they were in a similar situation. Conference with the parents with admin if it continues.

I agree with your solution and think it is a great way to solve the issue. May need to alert administration of the issue.
